Chicken with Orange

The amount of chicken isn’t stated. Allow about 1 drumstick per person, plus one extra.

Ingredients

  • Pre-cooked chicken (I use drumsticks which I’ve boiled, and then taken the meat off)
  • 50g butter
  • 2 onions, finely chopped
  • 2-4 stalks of celery, sliced
  • Juice of 2 oranges
  • Rind of 2 oranges
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 2 cups chicken stock
  • 2 tbsp cornflour
  • 2 tbsp white vinegar

Method

  1. Melt the butter in a large frying pan, and then fry up the onions and celery.
  2. Add the chicken stock, orange juice, orange rind, cinnamon, and ginger, and stir to combine.
  3. Add the chicken and simmer for 20 minutes.
  4. Combine the cornflour and white vinegar in a mug, and then pour into the chicken mixture. Stir it in until the sauce thickens.
  5. Serve with rice.
