
The idea for these came from the cookies they have at Subway. I’ve tried to create a version with less sugar in them. They’re still sweet though, even with the sugar content halved!
NOTE: The amount of sugar in the recipe I’ve based this on. Not the actual Subway cookies!

Ingredients:
- 75g butter
- 1/4 cup sugar
- 1/4 cup brown sugar (don’t pack it in to the measuring cup, do it loose)
- 1 large egg
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 cup of white chocolate drops, or chopped white chocolate
- 60g – 70g of macadamia nuts, roughly chopped.
Method:
- Melt the butter in a large pot. Remove from the heat and add the sugar, and brown sugar and stir to combine.
- Add the egg and stir again.
- Sift the flour and baking soda together, and then stir into the mixture.
- Stir in the white chocolate and the macadamia nuts.
- Form the mixture into balls using a teaspoon and your hands. Place on a greased baking tray and then gently flatten with a floured fork. This helps the biscuits spread, like seen in the photo.
- Bake for 8 minutes, then remove from oven and cool on the baking tray for 2 minutes to firm up, before shifting to a wire rack.
