Strawberry Slice

Ingredients

Base:

  • 125g butter
  • 1/3 cup sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 2 cups flour
  • 1 tsp baking powder

Filling:

  • Strawberry jam
  • 80g dried strawberries, thinly sliced

Method

  1. Preheat the oven to 180°c
  2. Cream the butter and sugar, and then add the vanilla. Beat until light and fluffy.
  3. Add the egg, and beat to combine. Sift the flour, baking powder, and cocoa together and stir into the creamed mixture.
  4. Knead the mixture with your hands until it forms a dough.
  5. Press half the dough into a greased 26cm x 20cm slice tin.
  6. Spread a layer of strawberry jam over the base, then scatter the sliced strawberries over the jam.
  7. Roll out the remaining dough and place over the jam layer. If this is difficult to do in one piece, consider cutting the rolled out dough in half and placing the two halves over the jam layer. *
  8. Bake for 20 minutes

*For an alternative and easier to prepare top layer to the slice, add an extra 1/4 cup on flour to the remaining dough, knead it in, and then roll out thinly. Using a knife, cut into long thin strips and arrange to form a lattice pattern over the fruit filling.
