
You can boost the orange flavour of the icing by adding the zest of a second orange, or you could add some orange essence.
Ingredients
- 1 1/2 cups flour
- 1/4 cup cocoa
- 3/4 cup brown sugar
- 1 cup desiccated coconut
- 3 cups cornflakes, or crushed Weetbix
- 250g butter, melted
- 1 tsp vanilla essence
- 1 1/2 cups icing sugar
- zest of 1 orange
- 1 tsp butter
- juice of 1 orange
Method
- Preheat oven to 180°c. Grease or line a slice tin (33cm x 23cm)
- Sift the flour and cocoa into a bowl. Stir in the brown sugar, coconut, cornflakes or Weetbix. Make a well in the centre.
- Add the melted butter and vanilla essence together. Stir into the dry mixture until no dry cocoa or flour remain.
- Press the mixture into the slice tin and bake for 25 minutes.
- Put on a wire rack to cool.
- Once the slice is cold, put the icing sugar, orange zest, and the 1 tsp of butter in a measuring jug. Add enough of the orange juice to combine them into the icing with the consistency you desire.
- Spread the icing over the slice, try to keep it thin as seen in the photo – The icing doesn’t seem to set if it’s thicker than this.
