Ginger Crisps

Ingredients

  • 100g butter
  • 1/3 cup sugar
  • 1/2 tsp vanilla essence
  • 2 tsp golden syrup
  • 170g flour
  • 1/2 tsp baking powder
  • 2 tsp ground ginger

Icing

  • 50g butter
  • 1/2 tsp golden syrup
  • 50g icing sugar
  • 1 tsp ground ginger

Method

  1. Preheat oven to 180°c
  2. Cream butter, sugar, and then stir in the vanilla and golden syrup.
  3. Sift the flour and baking powder together, and add the ground ginger.
  4. Combine all the ingredients, and then knead the mixture with your hands (in the mixing bowl) until the mixture clumps together.
  5. Bake for 8 minutes, and then cool on a wire rack.
  6. To make the icing, soften the butter and then mix in the golden syrup, icing sugar, and ground ginger.
