
A variation on the traditional Fruit Squares recipe as this uses a biscuit base, as opposed to having to make pastry for this recipe.

Ingredients
Base
- 125 butter, softened
- 1/3 cup sugar
- 1 tsp vanilla essence
- 1 egg
- 2 cups flour
- 1 tsp baking powder
Filling
- 50g butter, melted
- 1 apple (preferably Granny Smith), peeled, cored and grated
- 1/4 cup raisins
- 1/4 cup sultanas
- 1/4 cup currants
- 1 tsp mixed spice
- zest of 1 lemon
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 1/4 cup brown sugar
Method
- Preheat oven to 180°c.
- Cream the butter, sugar and vanilla together until light and fluffy. Add the egg, beating well. Sift the flour and baking powder together and mix into the creamed mixture.
- Press half the mixture into a greased slice tin.
- Combine all the filling ingredients, and then spread over the mixture which has been pressed into the the tin.
- Roll out the other half of the dough, and place over the filling.
- Bake for 20 minutes, then cut into large squares when cold.
