
And the last in my line of trying to make homemade versions of the Subway cookies. The same base recipe except these ones have two tablespoons of cocoa in them and half a cup of white chocolate drops.

Ingredients:
- 75g butter
- 1/4 cup sugar
- 1/4 cup brown sugar (don’t pack it in to the measuring cup, do it loose)
- 1 large egg
- 1 cup flour
- 1/2 tsp baking soda
- 2 tbsp cocoa (I use Dutch Process cocoa)
- 1/2 cup white chocolate drops
Method:
- Melt the butter in a large pot. Remove from the heat and add the sugar, and brown sugar and stir to combine.
- Add the egg and stir again.
- Sift the flour,baking soda, and cocoa together, and then stir into the mixture.
- Stir in the white chocolate drops.
- Place heaped teaspoons of the mixture on a greased baking tray. Flatten lightly with a floured fork.
- Bake for 8 minutes, then remove from oven and cool on the baking tray for 2 minutes to firm up, before shifting to a wire rack.
