Cashew and Caramel Slice

Ingredients

Base:

  • 125g butter
  • 1/4 cup sugar
  • 1 1/2 cups flour
  • 1/2 tsp baking powder

Icing:

  • 55g butter
  • 1 tbsp golden syrup
  • 2 tsp brown sugar
  • 1/2 cup icing sugar
  • two handfuls of cashews, roughly chopped
  • 1 tsp salt

Method

  1. Preheat oven to 180°c
  2. Cream butter and sugar, then sift together flour and baking powder, and add to the creamed mixture.
  3. Stir to combine, and then knead the mixture until the dough clumps together.
  4. Press into a slice tin and bake for 20 minutes.
  5. While slice cooks, melt butter, golden syrup, and brown sugar in a small pot. When melted, mix the icing sugar in, and stir in chopped cashews.
  6. Spread the icing over the base, don’t wait for it to cool.
  7. Once the icing has cooled but not set, sprinkle with salt
