Teriyaki Sauce

Ingredients:

35g brown sugar
75ml soy sauce
75ml mirin (white wine can be used as a substitute)
75ml sake (sherry can be used as a substitute)

Method:

Combine brown sugar, mirin, sake, and soy sauce in a small pot and bring to the boil. Reduce the heat to medium then simmer for 2 minutes.

In this photo, I cooked leftover cooked chicken with the teriyaki sauce. When making “Teriyaki Chicken”, cook the chicken first, and then in the sauce until the sauce thickens and caramelises.
