Ingredients

2 tbsp oil
1 red onion, finely chopped
1 red capsicum, diced
1 yellow capsicum, diced
1 chorizo sausage, sliced (or 6 frankfurters, sliced)
1/2 tsp paprika
2 tins chopped tomatoes
4 eggs

Method

Saute red onion, red capsicum, yellow capsicum, sausage, and paprika for 5 minutes.

Stir in the tinned tomatoes and simmer the mixture for 5 minutes.

Add the eggs and cover the frying pan, continue to cook until the eggs are set.

Serve with mashed potatoes or rice.
