
If you wish, you can substitute the bacon in the recipe with salami, Rookwurst, or other sausage.

Ingredients
- 1 tbsp butter
- 2 rashers of bacon (or salami, rookworst, etc)
- 1 large onion, chopped
- 1 stalk of celery, chopped
- 2 medium potatoes, cut into small chunks
- 1 tsp dried herbs (basil, oregano, etc)
- 2 cups chicken stock
- 2 tbsp cornflour
- 2 cups milk
- 420g frozen corn
Method
- Melt butter in a large saucepan. Cook the onion, bacon, and celery over a medium heat for 4 minutes. Add the potatoes, herbs, and chicken stock, cover and simmer for 15 minutes.
- Mix the cornflour with a small amount of the milk, then stir in the remaining milk. Add to the soup along with the corn.
- Set on a high heat, stirring constantly until the soup thickens.
