Potato, corn, and bacon chowder

If you wish, you can substitute the bacon in the recipe with salami, Rookwurst, or other sausage.

Ingredients

  • 1 tbsp butter
  • 2 rashers of bacon (or salami, rookworst, etc)
  • 1 large onion, chopped
  • 1 stalk of celery, chopped
  • 2 medium potatoes, cut into small chunks
  • 1 tsp dried herbs (basil, oregano, etc)
  • 2 cups chicken stock
  • 2 tbsp cornflour
  • 2 cups milk
  • 420g frozen corn

Method

  1. Melt butter in a large saucepan. Cook the onion, bacon, and celery over a medium heat for 4 minutes. Add the potatoes, herbs, and chicken stock, cover and simmer for 15 minutes.
  2. Mix the cornflour with a small amount of the milk, then stir in the remaining milk. Add to the soup along with the corn.
  3. Set on a high heat, stirring constantly until the soup thickens.
