Onion Soup

Original Recipe:

Alison Holst (Joan’s Onion Soup)

Ingredients

6 medium-sized onions (500g)
100g butter
2 tsp sugar
1/4 cup flour
6 cups hot water
4-6 tsp instant beef stock
1-2 tsp Worcestershire sauce
Pepper

Method

Thinly slice the onions. Melt the butter in a medium-large heavy-based pot and add the onion. Cook over a moderate heat, stirring frequently, until the onion softens and goes an even golden brown (about 15-45 minutes). Add the sugar and stir again (the sugar helps brown the mixture). Add the flour and cook, stirring continually, for 2-3 minutes longer. Mix the beef stock into the hot water, and then gradually add to the onions, stirring until the mixture boils. Add the Worcestershire sauce. Season to taste with pepper.

Serving Suggestion: Serve with Focaccia Bread.
