
Ingredients
- 3 leeks
- 1 onion
- 50g butter
- 1kg potatoes
- 3 cups water
- salt & pepper
- milk
Method
- Slice leeks and onions finely. In a saucepan heat the butter and sauté the leek and onion without browning.
- Add peeled, chopped potatoes, water and seasoning.
- Cover. Bring to the boil then reduce heat and simmer, until vegetables are soft. Use stick blender to get a thick purée.
- Add sufficient milk to make soup the desired consistency. Return to heat but do not boil. Serve sprinkled with chopped chives or parsley.
