Leek and Potato Soup

Ingredients

  • 3 leeks
  • 1 onion
  • 50g butter
  • 1kg potatoes
  • 3 cups water
  • salt & pepper
  • milk

Method

  1. Slice leeks and onions finely. In a saucepan heat the butter and sauté the leek and onion without browning.
  2. Add peeled, chopped potatoes, water and seasoning.
  3. Cover. Bring to the boil then reduce heat and simmer, until vegetables are soft. Use stick blender to get a thick purée.
  4. Add sufficient milk to make soup the desired consistency. Return to heat but do not boil. Serve sprinkled with chopped chives or parsley.
