Ingredients:
- 1 onion, finely chopped
- 4 cloves of garlic, finely chopped (otherwise use 1 tsp of garlic salt)
- Lamb Shoulder Chops (What your budget allows)
- 1/2 tsp ground ginger
- tin of chopped tomatoes
- 1 tsp dried coriander
- 1 tbsp of curry powder
- 1/4 tsp of turmeric
- 1 tsp ground cumin
- 1 tbsp of tomato paste
- 1/2 tsp of salt
- small tin of coconut cream
Method:
Fry onion and garlic in a small frying pan until translucent. It doesn’t matter if it has browned a bit.
Put lamb shoulder chops in the slow cooker, and then mix in all other ingredients except the coconut cream. Add the fried onion and garlic as well.
Cook on high for 3 hours, or low for 6 hours. Half an hour before the cooking complete, add the coconut cream.
Serve with rice.
