
Not strictly Italian – This is a simple and easy dish that you can put together, using relatively inexpensive ingredients! – Editor
- 450 – 500g sausages (your preference)
- 1 large onion, sliced
- 1 tin chopped tomatoes
- A handful of Button mushrooms / Swiss mushrooms
- A punnet of Cherry tomatoes, each chopped in half
- 1 tsp Garlic salt
- 1 tsp each of basil, thyme, and oregano
- Olives (amount to your liking)
Method
- Slice the sausages and cook them over a medium heat until they’re cooked through (about 10 minutes)
- If the sausages have produced excess fat when cooking, drain the excess fat away and add some fresh olive oil to the pan.
- Fry the onion and the mushrooms.
- Add all the rest of the ingredients and stir them in, and then cook for five minutes over a low/medium heat until everything has heated through.
- Serve with rice.
