Italian-Inspired Meal

Not strictly Italian – This is a simple and easy dish that you can put together, using relatively inexpensive ingredients! – Editor

  • 450 – 500g sausages (your preference)
  • 1 large onion, sliced
  • 1 tin chopped tomatoes
  • A handful of Button mushrooms / Swiss mushrooms
  • A punnet of Cherry tomatoes, each chopped in half
  • 1 tsp Garlic salt
  • 1 tsp each of basil, thyme, and oregano
  • Olives (amount to your liking)

Method

  1. Slice the sausages and cook them over a medium heat until they’re cooked through (about 10 minutes)
  2. If the sausages have produced excess fat when cooking, drain the excess fat away and add some fresh olive oil to the pan.
  3. Fry the onion and the mushrooms.
  4. Add all the rest of the ingredients and stir them in, and then cook for five minutes over a low/medium heat until everything has heated through.
  5. Serve with rice.
