Greek Salad

Original Recipe: Raumati South Kindergarten cookbook

Ingredients

  • 6 large tomatoes, chopped
  • 2 telegraph cucumbers, quartered and thinly sliced
  • 1 red onion, thinly sliced
  • 1 cup of pitted olives
  • 200g feta cheese
  • 1/2 cup olive oil (optional)
  • dried oregano

Method

  • Mix the tomatoes, cucumber, red onion, and olives in a salad bowl.
  • Crumble the feta cheese into large pieces and scatter over the top of the salad.
  • Sprinkle with a little dried oregano
  • If desired, drizzle 1/2 cup of olive oil over the salad as the salad dressing. Otherwise (and un-authenticaly), serve mayonnaise with the salad and diners can add some to their salad as they wish.
