
A simplified take on the well known chicken dish.
Ingredients:
- 1 large onion, finely chopped
- 5-6 button mushrooms, sliced
- 1 tsp garlic salt
- 1/2 tsp of oregano, basil, and marjoram
- tin of chopped tomatoes
- 8-10 pitted prunes, halved
- handful of dried cranberries
- cold cooked chicken (about the equivalent of 4 chicken drumsticks)
- 2 handfuls of almonds
- 2 cups chicken stock
- olives, if desired (optional)
Method:
- Add some oil to a large frying pan, and fry the onions and mushrooms until the onion turns translucent.
- Add the garlic salt and herbs, and stir in.
- Add the tin of chopped tomatoes, prunes, cranberries, chicken, almonds, and olives if desired.
- Add the chicken stock and gently stir to combine.
- Bring to the boil and then simmer for 20 minutes.
- Serve with rice.
