Chicken Cacciatore

The Upper Hutt Connection

A simplified take on the well known chicken dish.

Ingredients:

  • 1 large onion, finely chopped
  • 5-6 button mushrooms, sliced
  • 1 tsp garlic salt
  • 1/2 tsp of oregano, basil, and marjoram
  • tin of chopped tomatoes
  • 8-10 pitted prunes, halved
  • handful of dried cranberries
  • cold cooked chicken (about the equivalent of 4 chicken drumsticks)
  • 2 handfuls of almonds
  • 2 cups chicken stock
  • olives, if desired (optional)

Method:

  1. Add some oil to a large frying pan, and fry the onions and mushrooms until the onion turns translucent.
  2. Add the garlic salt and herbs, and stir in.
  3. Add the tin of chopped tomatoes, prunes, cranberries, chicken, almonds, and olives if desired.
  4. Add the chicken stock and gently stir to combine.
  5. Bring to the boil and then simmer for 20 minutes.
  6. Serve with rice.
