Ingredients
- 500g beef mince
- 1 onion,finely chopped
- 1 tbsp brown sugar
- 1 tsp ground ginger
- 1 tsp curry powder
- 1/2 cup raisins / sultanas
- 1/2 cup chutney / relish
- 1/2 cup beef stock
- 1 tbsp wholegrain mustard
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 2 eggs
- 1 cup milk
- 1 tsp finely chopped fresh thyme
Method
- Preheat oven to 180°c
- Brown the mince in a large frying pan over a high heat.
- Add onion, brown sugar, ginger, and curry powder, and cook for 2-3 minutes.
- Stir in raisins/sultanas, chutney/relish, beef stock, mustard, Worcestershire sauce and tomato paste. Cover the frying pan and simmer on a low heat for 30 minutes.
- Transfer mixture to an ovenproof dish.
- Beat eggs, milk, and thyme together and pour over the mince.
- Bake in oven for 30 minutes, or until the egg mixture has set. Serve with mashed potatoes.
