Ingredients

  • 500g beef mince
  • 1 onion,finely chopped
  • 1 tbsp brown sugar
  • 1 tsp ground ginger
  • 1 tsp curry powder
  • 1/2 cup raisins / sultanas
  • 1/2 cup chutney / relish
  • 1/2 cup beef stock
  • 1 tbsp wholegrain mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 2 eggs
  • 1 cup milk
  • 1 tsp finely chopped fresh thyme

Method

  1. Preheat oven to 180°c
  2. Brown the mince in a large frying pan over a high heat.
  3. Add onion, brown sugar, ginger, and curry powder, and cook for 2-3 minutes.
  4. Stir in raisins/sultanas, chutney/relish, beef stock, mustard, Worcestershire sauce and tomato paste. Cover the frying pan and simmer on a low heat for 30 minutes.
  5. Transfer mixture to an ovenproof dish.
  6. Beat eggs, milk, and thyme together and pour over the mince.
  7. Bake in oven for 30 minutes, or until the egg mixture has set. Serve with mashed potatoes.
