Ingredients:
- 1 egg white
- 4 tbsp castor sugar
- 300 ml cream
- 1 tbsp instant coffee
- 1 tbsp sherry
- extra sweetened whipped cream, chocolate curls, or strawberries for decoration
Method:
- Whisk egg whites until stiff, gradually add castor sugar, and beat until the sugar is dissolved and the mixture is thick.
- Whip the cream with the instant coffee until thick.
- Fold the cream into the egg white mixture, and then fold in the sherry.
- Place mixture in serving dish, or individual serving dishes, and refrigerate for 2-3 hours.
- Before serving, top with sweetened cream, chocolate curls, or with strawberries.
