Here is a nice and easy Pavlova for the Christmas table

Original Recipe:
Edmonds cook book
Ingredients
4 egg whites.
1 & 1/2 cups castor sugar
1 teaspoon white vinegar.
1 teaspoon vanilla essence
1 tablespoon Cornflour.
Whipped cream.
Fresh berries, orange peel and mint leaves.
Method
Preheat oven 180°C using an electric beater mix egg whites and slowly add castor sugar for 10-15 minutes until thick and glossy. Add vinegar, vanilla essence and cornflour slowly together. Beat on high speed for a further 5 minutes.
Line an oven tray with baking paper. Draw a large circle on the baking paper, and add an oven proof jar or bowl in the centre to make your wreath. Place the pavlova in the preheated oven and turn down the temperature to 100°C.
Bake for one hour, then turn off oven, leave door slightly open until pavlova is cold. Decorate as shown in the picture with berries of your choice, and cut up mint leaves, and grate orange peel. Sprinkle over.
