White Chocolate and Macadamia Biscuits

The idea for these came from the cookies they have at Subway. I’ve tried to create a version with less sugar in them. They’re still sweet though, even with the sugar content halved!

NOTE: The amount of sugar in the recipe I’ve based this on. Not the actual Subway cookies!

Ingredients:

  • 75g butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar (don’t pack it in to the measuring cup, do it loose)
  • 1 large egg
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 cup of white chocolate drops, or chopped white chocolate
  • 60g – 70g of macadamia nuts, roughly chopped.

Method:

  1. Melt the butter in a large pot. Remove from the heat and add the sugar, and brown sugar and stir to combine.
  2. Add the egg and stir again.
  3. Sift the flour and baking soda together, and then stir into the mixture.
  4. Stir in the white chocolate and the macadamia nuts.
  5. Form the mixture into balls using a teaspoon and your hands. Place on a greased baking tray and then gently flatten with a floured fork. This helps the biscuits spread, like seen in the photo.
  6. Bake for 8 minutes, then remove from oven and cool on the baking tray for 2 minutes to firm up, before shifting to a wire rack.
