With one simple modification and a bit of salt, the classic ginger slice recipe can be turned into a salted caramel one.
Original recipe: Edmonds
Ingredients
Base:
- 125g butter
- 1/4 cup sugar
- 1 1/2 cups flour
- 1/2 tsp baking powder
Icing:
- 55g butter
- 1 tbsp golden syrup
- 2 tsp brown sugar
- 1/2 cup icing sugar
- 1 tsp salt
Method
- Preheat oven to 180°c
- Cream butter and sugar, then sift together flour and baking powder, and add to the creamed mixture.
- Stir to combine, and then knead the mixture until the dough clumps together.
- Press into a slice tin and bake for 20 minutes.
- While slice cooks, melt butter, golden syrup, and brown sugar in a small pot. When melted, mix the icing sugar in, and then stir in the salt.
- Spread the icing over the base, don’t wait for it to cool.
