Refrigerator Shortbread

Ingredients:

  • 200g butter
  • 3/4 cup icing sugar
  • 3/4 cup cornflour
  • 1 1/4 cups flour
  • 1/8 tsp salt

Method

  1. Cream butter and sugar. Stir in sifted cornflour, flour and salt.
  2. Knead mixture until smooth and then on a floured board, roll into a log.
  3. Wrap in greaseproof paper and chill in fridge.
  4. When required, cut into 1 cm thick slices using a knife dipped in hot water. Bake at 150°C for about 20 minutes.
