
A variation on the slice which originated from Nanaimo, on Vancouver Island in Canada.
Ingredients:
Base:
- 125g butter, softened
- 1/4 cup sugar
- 1 1/2 cups flour
- 1/2 tsp baking powder
Custard Filling:
- 1 cup icing sugar
- 50g butter, softened
- 2 tbsp custard powder
- 1 1/2 tbsp milk
Dark Chocolate topping
- 1 cup dark chocolate
- 1 tbsp butter
Method:
- Preheat oven to 180°C
- Cream butter and sugar together, then sift the flour and baking powder together and add to the creamed mixture.
- Beat together, and then knead using hands to ensure everything is fully mixed together.
- Grease a 20 x 26 cm slice tin, and press the mixture evenly into the tin. Bake for 20 minutes, then wait for the slice to cool to completely before making the custard filling
Custard Filling:
- Place the butter in a bowl or measuring jug.
- Sift half the icing sugar (1/2 cup), and add to the butter. Then add the custard powder, and the milk. Beat until smooth.
- Then sift the remaining half of the icing sugar (1/2 cup), and continue to beat until it reaches a good spreading consistency.
- Spread over the cooled base.
Dark Chocolate topping
- Melt chocolate and butter in a measuring jug or bowl, gently heating it in a microwave on low power, stirring every ten or twenty seconds – microwaved chocolate holds its shape until stirred.
- Spread the melted chocolate over the custard filling.
- Once the chocolate is set, then cut slice into squares.
