Nanaimo Slice

The Upper Hutt Connection

A variation on the slice which originated from Nanaimo, on Vancouver Island in Canada.

Ingredients:

Base:

  • 125g butter, softened
  • 1/4 cup sugar
  • 1 1/2 cups flour
  • 1/2 tsp baking powder

Custard Filling:

  • 1 cup icing sugar
  • 50g butter, softened
  • 2 tbsp custard powder
  • 1 1/2 tbsp milk

Dark Chocolate topping

  • 1 cup dark chocolate
  • 1 tbsp butter

Method:

  1. Preheat oven to 180°C
  2. Cream butter and sugar together, then sift the flour and baking powder together and add to the creamed mixture.
  3. Beat together, and then knead using hands to ensure everything is fully mixed together.
  4. Grease a 20 x 26 cm slice tin, and press the mixture evenly into the tin. Bake for 20 minutes, then wait for the slice to cool to completely before making the custard filling

Custard Filling:

  1. Place the butter in a bowl or measuring jug.
  2. Sift half the icing sugar (1/2 cup), and add to the butter. Then add the custard powder, and the milk. Beat until smooth.
  3. Then sift the remaining half of the icing sugar (1/2 cup), and continue to beat until it reaches a good spreading consistency.
  4. Spread over the cooled base.

Dark Chocolate topping

  1. Melt chocolate and butter in a measuring jug or bowl, gently heating it in a microwave on low power, stirring every ten or twenty seconds – microwaved chocolate holds its shape until stirred.
  2. Spread the melted chocolate over the custard filling.
  3. Once the chocolate is set, then cut slice into squares.
