
The second in my line of trying to make the Subway cookies at home. Exactly the same base recipe as the White Chocolate and Macadamia biscuits except these ones have half a cup of M&M’s in them.

Ingredients:
- 75g butter
- 1/4 cup sugar
- 1/4 cup brown sugar (don’t pack it in to the measuring cup, do it loose)
- 1 large egg
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 cup of M&M’s (or similar)
Method:
- Melt the butter in a large pot. Remove from the heat and add the sugar, and brown sugar and stir to combine.
- Add the egg and stir again.
- Sift the flour and baking soda together, and then stir into the mixture.
- Stir in the M&M’s.
- Place heaped teaspoons of the mixture on a greased baking tray.
- Bake for 8 minutes, then remove from oven and cool on the baking tray for 2 minutes to firm up, before shifting to a wire rack.
