Malteser Biscuits

The Upper Hutt Connection

Original Recipe: Edmonds

Ingredients

  • 125g butter, softened
  • 1/3 cup sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 1 tbsp of instant coffee
  • 2 and 1/4 cups flour
  • 1 tsp baking powder
  • 140g pack of Maltesers

Method:

  1. Preheat oven to 180°C
  2. Cream the butter, sugar, and vanilla together until light and fluffy. Add the egg, beating well. Stir in the coffee.
  3. Sift the flour and baking powder together and stir into the creamed mixture. Knead together with hands to ensure everything is fully combined.
  4. Put the dough out onto a floured bench and roll out thinly, about 3mm thick.
  5. Cut into rounds and place on a greased baking tray. Cut the maltesers in half, placing four halves on each biscuit. The pack should cover almost all of the biscuits (I had to use a chocolate button to make up the numbers on the last one).
  6. Bake for 11 minutes, remove from oven then leave to rest on tray for 2 minutes before transferring to a wire rack to cool.
