
Original Recipe: Edmonds
Ingredients
- 125g butter, softened
- 1/3 cup sugar
- 1 tsp vanilla essence
- 1 egg
- 1 tbsp of instant coffee
- 2 and 1/4 cups flour
- 1 tsp baking powder
- 140g pack of Maltesers
Method:
- Preheat oven to 180°C
- Cream the butter, sugar, and vanilla together until light and fluffy. Add the egg, beating well. Stir in the coffee.
- Sift the flour and baking powder together and stir into the creamed mixture. Knead together with hands to ensure everything is fully combined.
- Put the dough out onto a floured bench and roll out thinly, about 3mm thick.
- Cut into rounds and place on a greased baking tray. Cut the maltesers in half, placing four halves on each biscuit. The pack should cover almost all of the biscuits (I had to use a chocolate button to make up the numbers on the last one).
- Bake for 11 minutes, remove from oven then leave to rest on tray for 2 minutes before transferring to a wire rack to cool.
