
Ingredients:
- 125g of butter
- 1/2 395g tin of sweetened condensed milk
- 250g malt biscuits (otherwise use digestives or a similar plain biscuit)
- 75g Pascall’s Explorers, cut into small pieces. (For those in North America or the UK, use Circus Peanuts in USA or Canada / use Basset’s Bananas in the UK. These have a close texture to Explorers)
- Finely desiccated coconut
Method:
- Melt butter and combine with the condensed milk. Set aside to cool.
- Crush malt biscuits finely. Combine with the butter and condensed milk, and the chopped Explorers, Circus Peanuts or Basset’s Bananas. Using your hands works well to make sure everything is properly mixed together.
- Lay out a sheet of baking paper or grease-proof paper, and turning out the mixture onto it, form it into a log shape. Sprinkle the sheet with desiccated coconut and then wrap it around the log. Using it to press the coconut onto the log.
- Place and keep in the fridge.
