Kiwi Biscuits

These also go by the name of Santé Biscuits in the Edmonds Cookery Book, or otherwise they could just be called chocolate chip biscuits.

Ingredients

  • 125g butter, softened
  • 1/4 cup sugar
  • 3 Tbsp sweetened condensed milk
  • a few drops of vanilla essence
  • 1 1/2 cups standard flour
  • 1 tsp baking powder
  • 1/2 cup of chocolate chips (I use a block of Whittakers Dark Ghana 70%, and then roughly chop it. Is about four rows of the block)

Method

  1. Preheat the oven to 180°C
  2. Cream the butter, condensed milk and vanilla until light and fluffy. Sift the flour and baking powder together and mix into the creamed mixture, followed by the chocolate chips.
  3. Roll teaspoonfuls of the mixture into balls, place on a greased oven tray and flatten with a floured fork.
  4. Bake for 9-10 minutes. Leave on the tray for 1-2 minutes and then place on a wire rack to cool.
