The Upper Hutt Connection

Can be easily changed round to appeal to different interests. Make them pink / magenta (raspberry jelly crystals) for Barbie Biscuits, you could pick green (lime jelly crystals) for Shrek Biscuits, etc.

Ingredients:

  • 150g butter, softened
  • 1/4 cup brown sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 2 and a 1/4 cups flour
  • 1 tsp baking powder
  • 1 cup of icing sugar
  • half a pack of jelly crystals (colour / flavour of your choosing)
  • 1 tsp butter
  • boiling water

Method:

  1. Preheat oven to 180°C
  2. Cream butter, sugar together, and then add the vanilla essence, beating it in.
  3. Sift together the flour and baking powder, and then add to the creamed mixture and beat to combine. Knead with hands to make sure everything is fully combined.
  4. Lightly grease an oven tray. Then dust a bench with flour, then roll out thinly. Using a biscuit cutter, cut into rounds, placing them on the tray.
  5. Bake for 11 minutes, then take out to sit on the tray for 2 minutes before transferring to a wire rack.
  6. When cool, make the icing by combining the icing sugar, butter, and jelly crystals with a small amount of boiling water. Be careful with the boiling water as only a very small amount is needed, just keep adding it gradually and beating the icing until it reaches the desired consistency.
  7. Spread the icing carefully on the biscuits and leave to set. Ideas for icing colours include:
  • Pink / Magenta (Raspberry): Barbie
  • Blue (Blueberry): Sonic
  • Yellow (Lemon): Spongebob Squarepants
  • Green (Lime): Shrek
