Guinness Cake

Ingredients:

  • 225g butter
  • 225g brown sugar
  • 4 eggs, beaten
  • 115g mixed peel
  • 2 tsp mixed spice
  • 225g sultanas
  • 225g raisins
  • 280g flour
  • 115g walnuts
  • 8 – 12 tbsp Stout (Guinness)

Method:

  1. Cream butter and sugar, add eggs, and then the remaining dry ingredients. Lastly, stir in the Stout (Guinness)
  2. Bake at 160°C for 90 minutes.
