Gingerbread Biscuits

Ingredients:

  • 125g butter, softened
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 tbsp treacle
  • 1 tsp of ginger, cinnamon, and ground cloves
  • 2 & 1/4 cups flour
  • 1 tsp baking powder

Method:

  1. Preheat the oven to 180°C
  2. Cream the butter and brown sugar, and then stir in the vanilla. Add the egg and treacle, and mix them in.
  3. Sift together the ginger, cinnamon, ground cloves, flour, and baking powder and then add to the creamed mixture. Mix to combine, then knead with hands until it forms a dough.
  4. Flour the bench surface and lightly flour the dough, then roll out thinly with a rolling pin, to about 3mm thick.
  5. Use biscuit cutters to cut them into what ever shape appeals.
  6. Bake in the oven for 11 minutes, then remove from oven and leave to sit for 2 minutes before transferring to a wire rack to cool.
