
Ingredients
- 100g butter
- 1/3 cup sugar
- 1/2 tsp vanilla essence
- 2 tsp golden syrup
- 170g flour
- 1/2 tsp baking powder
- 2 tsp ground ginger
Icing
- 50g butter
- 1/2 tsp golden syrup
- 50g icing sugar
- 1 tsp ground ginger
Method
- Preheat oven to 180°c
- Cream butter, sugar, and then stir in the vanilla and golden syrup.
- Sift the flour and baking powder together, and add the ground ginger.
- Combine all the ingredients, and then knead the mixture with your hands (in the mixing bowl) until the mixture clumps together.
- Bake for 8 minutes, and then cool on a wire rack.
- To make the icing, soften the butter and then mix in the golden syrup, icing sugar, and ground ginger.
