Frangipane Slice

Frangipane ingredients:

  • 100g butter, softened
  • 50g sugar
  • 2 eggs
  • 150g ground almonds
  • 1 tsp almond essence
  • 1 tbsp flour

Base ingredients:

  • 125g butter
  • 1/4 cup sugar
  • 1 1/2 cups flour
  • 1/2 tsp baking powder

Method:

  1. Start by making the frangipane. Cream the butter and sugar until light and fluffy.
  2. Beat in the eggs one at a time, beating well after each addition.
  3. Fold in the ground almonds, flour, and the almond essence.
  4. Place in the fridge for 20 minutes.
  5. Meanwhile, preheat the oven to 180°C.
  6. Cream the butter and sugar.
  7. Sift together the flour and baking powder and beat in the creamed mixture, knead with your hands until it forms large clumps.
  8. Grease a slice tin and press the dough into it. Then bake for 15 minutes.
  9. Spoon the frangipane mixture onto the base in large spoonfuls, wait for the heat of the base to soften the frangipane so you can spread it evenly over the hot base.
  10. Bake for another 15 minutes, then put on a wire rack to cool.
