Fairy Slice

The Upper Hutt Connection

Changes the children’s party food of Fairy Bread into a biscuit-based slice with buttercream icing sprinkled liberally with Hundreds and Thousands.

Ingredients:

Base:

  • 125g butter, softened
  • 1/3 cup sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 2 cups flour
  • 1 tsp baking powder

Icing:

  • 1 & 1/2 cups icing sugar
  • 90g butter, softened
  • 1/2 tsp vanilla essence
  • 1 & 1/2 tbsp milk
  • Hundreds and Thousands

Method:

Base:

  1. Preheat the oven to 180°C
  2. Cream the butter and sugar, and then beat in the vanilla.
  3. Add the egg, and beat well.
  4. Sift the flour and baking powder together and stir into the creamed mixture. Once combined, knead with your hands to make sure everything is properly mixed together.
  5. Grease a slice tin (approx 20cm x 26cm, or a bit larger) with butter and, press the mixture into the tin, trying to keep it as level as you can to help it rise evenly, but this is not guaranteed to happen. Mine rose unevenly even after I’d made it as level as I could.
  6. Bake in the oven for 20 minutes
  7. Allow the base to cool in the tin until it’s at room temperature.

Icing:

  1. Sift half the icing sugar into a glass measuring jug or bowl
  2. Cream the butter with the sifted icing sugar, vanilla, and milk. Beat until smooth, and then sift the other half of the icing sugar and gradually beat until it reaches a good spreading consistency.
  3. Spread over the cooled base, and while still soft and before it sets, sprinkle generously with Hundreds and Thousands.
  4. Cut into pieces once set.
