
Ingredients:
- 100g butter
- 1/8 cup sugar (do half 1/4 cup measure)
- 1 cup flour
- 2 tbsp instant coffee
Buttercream icing:
- 1 cup icing sugar
- 50g butter, softened
- 1/4 tsp vanilla essence
- 1 tsp milk
- 2 tbsp instant coffee
Method:
- Cream the butter, sugar and instant coffee, then stir in the flour. Knead with your hands to make sure the ingredients are well mixed.
- Press into a greased slice tin, and bake for 10 minutes at 170°C
- Place slice tin on a wire rack to cool completely.
To make the buttercream icing:
- In a measuring jug, cream the butter with half the icing sugar. Add the vanilla, milk, and the instant coffee, beating until smooth.
- Beat in the remaining icing sugar, and spread butter cream icing over the cold slice.
