Apricot Slice

Ingredients

  • 125g butter, softened
  • 1/4 cup caster sugar (heaped)
  • 1 3/4 cups of flour
  • 2 tsp baking powder
  • 1 egg, beaten
  • 1 tbsp of milk
  • Apricot jam
  • 120g – 130g dried apricots, chopped into small cubes

Method

  1. Preheat oven to 180°c
  2. Cream butter and caster sugar.
  3. Sift flour and baking powder into creamed mixture, and stir to combine.
  4. Add the beaten egg and the milk, and stir to combine.
  5. Turn the mixture onto a floured surface and knead to form a dough.
  6. Halve the dough, using one half to line a greased slice tin.
  7. Spread the dough with apricot jam and then sprinkle with the chopped dried apricots
  8. Roll out the remaining dough and place over the layer of apricots.
  9. Bake for 14-15 minutes
