Original Recipe (Base): Edmonds

Ingredients
- 125g butter, softened
- 1/4 cup caster sugar (heaped)
- 1 3/4 cups of flour
- 2 tsp baking powder
- 1 egg, beaten
- 1 tbsp of milk
- Apricot jam
- 120g – 130g dried apricots, chopped into small cubes
Method
- Preheat oven to 180°c
- Cream butter and caster sugar.
- Sift flour and baking powder into creamed mixture, and stir to combine.
- Add the beaten egg and the milk, and stir to combine.
- Turn the mixture onto a floured surface and knead to form a dough.
- Halve the dough, using one half to line a greased slice tin.
- Spread the dough with apricot jam and then sprinkle with the chopped dried apricots
- Roll out the remaining dough and place over the layer of apricots.
- Bake for 14-15 minutes
